Ingredients:

1 quart apple juice |
|
1 pint fresh strawberries, sliced |
|
1 teaspoon vanilla extract |
|
1/3 cup agar-agar flakes |
|
1 tablespoon lemon juice |
|
2-3 tablespoons maple syrup or rice syrup for sweetness (optional) |

Directions:
In a medium saucepan, heat juice and agar over medium heat and stir occasionally as it comes to a boil.
Simmer another 5 minutes or until liquid is clear and smooth. Add berries and lemon juice (and optional sweeteners).
Remove from stove and pour into a heatproof glass pyrex dish. Cool and refrigerate 2-3 hours, or until set. Cut into cubes to serve.
